Vegetarian Pan Pizza With Lots of Greens When you’re in the mood for pizza, but not in the mood for a big project, consider the pan pizza. Unlike freeform pizza, you won't have to deal with shaping dough, or navigating a hot stone—a pan provides all-around heat for reliably crisp, golden edges, and helps the dough rise nice and high, into something reminiscent of a pillowy Sicilian-style pie. The dough is enriched with whole-wheat or rye flour and topped with a thin layer of anchovy-spiked tomato sauce (skip the fish, if you wish), then showered with lots of grated Parmesan and a huge pile of greens and herbs once it's out of the oven.
