Sesame Chicken and Ice Cream Sandwiches

Here are my 5 things for you this week!
1. A grain-free chocolate chip cookie ice cream sandwich is such a fun way to end a meal!
2. There are many different nutrients that support thyroid function and thyroid hormone production. Using the right balance of nutrients can help improve thyroid function and balance hormones, whether you struggle with hypothyroidism, Hashimoto’s, hyperthyroidism, or Graves’.
3. Sesame Chicken is a favorite in our house! This recipe is a great one for parties or to make ahead because the chicken can be prepped ahead of time, frozen raw, and then baked straight from the freezer!
4. A healthy Vitamin D level is incredibly important to support the immune system, for thyroid hormone production, to protect against viruses, etc. An ideal range is between 50-80 ng/mL.
Getting out in the sunlight along with eating Vitamin D-rich foods such as pastured eggs and butter, raw/cultured dairy, grass-fed beef, and liver can be very helpful to keep D levels in a healthy range. And, if supplementation is needed, this one is a great choice.
5. For many years I felt guilty if I rested. I thought it was selfish or lazy to sit down and read during the day, sit outside and simply enjoy the fresh air, or really just do anything that wasn’t productive. I eventually realized that this wasn’t true and that my body needs rest just as much as it needs healthy foods.
Then, in Nutritional Therapy school I learned that the body needs to be in a rested state in order to detox, digest food, restore, repair, etc. So this helped me realize that it’s not just “ok” to rest, but actually necessary for my health!
Long walks outside, sitting in the sunshine, laying down and reading a book, a long soak in the bath, and being with family and simply enjoying our time together are all things I’ve learned to incorporate into my life without feeling guilty.
